Setting up URL redirection for subdomain pages that also point to other server

Please do not kill me if I do not get this 100% right, I'm doing my best for the first time here... I was trying to search for the answer but nothing is similar to my case.

I need help with setting up subdomain and URL redirects. I have help.domain.com that points to one help service provider (CNAME record set). I'm migrating to another help service provider and want to keep the same subdomain (set new CNAME record) and the URL structure will change (as the 2nd provider is different than the 1st one, obviously).

Still I want to have my users reaching out to old URL format to land on new pages under new URL format. Like if they visit help.domain.com/directory3/old-article-url they should be redirected to help.domain.com/section1/category5/some-new-article-name

I have mapping, 1 on 1, of new and old URLs.

Subdomain and main domain should use SSL. I was told that under SSL I can handle redirects but I'm not sure about it.

How to make this work? Because I was of impression that once I setup a CNAME record, everything that comes to help.domain.com/something-something will get redirected to the service provider that it is forwarded to and provider will handle the rest of the URL (so in my case if they visit old URL, new provider will show 404 page).
