正如评论中已经推测的那样，问题是由Libre Office在 AcroForm 字典中创建PDF并将 NeedAppearances 设置为 true 引起的。此外，使用了错误的字段名称。

字段名称

在您的代码中设置字段＆＃34; currentdate＆＃34;而在您的示例PDF中，该字段被称为＆＃34;当前时间＆＃34;。显然你必须使用正确的字段名称。

NeedAppearances 标志

此标志告诉PDF查看器它应为文档中的所有窗口小部件注释构造外观流和外观词典。因此，填写表格字段时，iText 

acroFields.SetField("currentdate", DateTime.Now.ToString());

不为该字段创建外观 - 无论如何，任何查看者都需要构建新的外观。

不幸的是形成扁平化

pdfStamper.FormFlattening = true;

是通过使用现有外观并仅使用它们来实现的。由于在设置字段时没有创建外观，因此其展平的形式变为空。
