我复制了你的案子，我相信原因就是错字：

has_attached_file :avatar, processors: [:custom], :style => {:original => {}}

应该是:styles而不是:style。如果没有:styles选项，回形针不会执行任何后期处理，并会忽略您的:processors。

此外，这是一个非常简单的Paperclip::Processor实现 - 将附件转换为灰度。替换convert中的命令以执行您自己的后处理：
